Bottom line up front: What are you really signing up for with Clover?

A processor as much as a POS: Clover devices work only with Clover processing, and its 36-month hardware subscriptions are non-cancelable, so you can buy out or upgrade but not walk away.

Starter lists no monthly fee with a $199 Go reader and 2.6% + 10¢ in person, Essentials is $29.95/mo at 2.5% + 10¢, and typed-in, online or phone sales cost 3.5% + 10¢. Set an offline payments policy before day one. Clover holds offline card sales for up to 7 days, but expired or canceled cards and wrong PINs are only declined once the device reconnects, so every offline sale is really an IOU. Use the per-payment and total offline limits so a big ticket is never taken on trust, and never uninstall the app while offline, because that deletes stored payments. Export your customer list from the web dashboard regularly too, since that's the only place it comes out.
