Products, prices, discounts and active subscriptions don't transfer, so each subscription gets recreated in Stripe on its current billing date, and Stripe Billing (0.7%) and Tax (0.5%) may start as Polar's fees stop. Sort out tax registration before the first Stripe charge, not after, because once you're the seller every sale is your liability. Then keep one spreadsheet of every active subscription with its price, next bill date and status, and tick each off as its Stripe copy goes live and the Polar one is cancelled, since that's how you catch a double charge or a customer who silently stops paying. Email customers before the switch too. The business charging their card changes from Polar to you, and a charge people don't recognize is how you end up paying $15 per dispute.
